Spring44 Old Tom Gin is the love child of gin and whiskey. Distilled with unique botanicals of lemongrass, grapefruit peel and fresh rosemary, it's then aged in toasted chardonnay barrels. It has a nice juniper presence that is perfectly complemented with light citrus notes and hints of toasted spice. It finishes long and rounds out nicely with a touch of warm spice. It's lovely neat or makes a mean martinez or manhattan.
It's also perfect suited for infusing with your favorite warm spices.
For this bottle:
- 375 ml Spring44 Old Tom Gin (1/2 bottle)
- 1 or 2 cinnamon sticks
- 3 star anise
- 5 cloves
- 3 allspice
Let sit overnight or until desired strength. Feel free to play with the spice combination - add nutmeg? black pepper? leave out anise. Choices are endless. Strain out spices when the bottle is infused to desired strength.
Suggested recipe to pair with spiced Old Tom:
- 3 oz apple cider
- 1 oz spiced Spring44 Old Tom Gin
- .5 oz honey syrup (1:1 honey and water), optional
- apple slices and fresh thyme for garnish, optional
Add apple cider to glass, top with gin and honey syrup. Stir to mix well. Fill glasses with ice and garnish with an apple slice and sprig of thyme if desired.
