MARTINEZ COCKTAIL

2 oz Spring44 Old Tom Gin
.75 oz sweet red vermouth
.25 oz Maraschino Cherry Liqueur
1 dash of Angostura bitters
garnish with lemon twist

Pour all ingredients into a mixing glass halfway filled with ice cubes. Stir well with a bar spoon and strain into a chilled cocktail glass. Garnish with a lemon twist.

 

TOM COLLINS

1.5 oz Spring44 Old Tom Gin
2 oz club soda
1 oz fresh lemon juice
.5 oz Gomme syrup
1 dash of Angostura bitters
garnish with Maraschino cherry and lemon slice

Pour the gin, lemon juice, syrup and bitters directly into a collins glass with ice. Top up with club soda. Garnish with a maraschino cherry and lemon slice.

 

CASINO COCKTAIL

2 oz Spring44 Old Tom Gin
.25 oz Maraschino
.25 oz fresh lemon juice
2 dashes orange bitters

Stir all ingredients with ice and strain in to a cocktail glass. Garnish with a lemon zest twist.

 

TUXEDO COCKTAIL

1 oz Spring44 Old Tom Gin
1 oz dry vermouth
.5 bar-spoon Maraschino
.25 bar-spoon Absinthe
3 dashes orange bitters

Stir all ingredients with ice and strain in to a cocktail glass. Garnish with a Maraschino cherry and a lemon zest twist.

 

OLD TOM COCKTAIL

2 oz Spring44 Old Tom Gin
.25 oz Pastis
1 dash orange bitters
.25 tsp sugar 

Shake in iced cocktail shaker & strain.

 

YALE VARIATION

1.75 oz Spring44 Old Tom Gin
.75 oz sweet vermouth
1 dash orange bitters

Stir in mixing glass with ice & strain.

 

GIBSON GIRL

1.25 oz Spring44 Old Tom Gin
1 .25 oz dry vermouth
lemon twist

Stir in mixing glass with ice & strain.

 

ROSEMARY OLD FITZ

2 oz Spring44 Old Tom Gin
.75 oz fresh lemon juice
.50 oz rosemary simple syrup
2 dashes of aromatic bitters
rosemary sprig
soda water

Stir in mixing glass with ice & strain. Top with soda water and garnish with lemon wheel and rosemary sprig.

 

FENNEL COLLINS

2 oz Spring44 Old Tom Gin 
.5 oz Genepy Liqueur 
.75 oz fennel juice (extracted)
.75 oz fresh pressed lemon juice
.25 oz honey syrup
3 dashes of Angostura bitters
chilled seltzer water
thyme sprig garnish 

In a shaker - add all ingredients (except for bitters and soda water) to ice, shake and strain over fresh ice in to collins glass. Top with chilled seltzer water, dash bitters on top of drink and garnish with thyme sprig.

 

DEVIL'S BACKBONE

1.5 oz Spring44 Old Tom Gin
.75 oz Carpano Antica
.75 oz Cochi Americano
2 dashes Orange bitters 

Place all ingredients in a mixing glass, add ice and stir until cold. Garnish with a long orange peel, expressing the oils over the top of the drink before placing it in the cocktail.
